“Fire and spice”

Chef Isaac Buckner learned the secrets of island cooking from “the grandmothers of Caneel” — the women who staffed the kitchens of the legendary St. John resort.

“They taught me to bring some fire and some spice,” he says.

The result is the Tamarind’s dinner service: hot gumbo, smoked ribs, Cajun ratatouille, blackened shrimp, red snapper fried “escovitch” (Jamaican style), seared peach salad, spicy fried chicken thighs and more.

Dinner is 5-9 pm M-Sat, with a special “Sliders Saturday” night.

Chef Isaac also picked up the Caribbean culture of three bountiful sides with your meal. “Think of your Thanksgiving plate — that’s what I’m striving for at the Tamarind.”

“St John’s best breakfast”

In the mornings, the Tamarind dishes up the island’s best, as voted by readers of Virgin Island Daily News. Classics such as omelets and French toast, steak and eggs, biscuits and gravy and the on-the-go favorite, the breakfast burrito.

On weekends we do our famous “Benny specials” — eggs benedict, florentine and blackstone.

Breakfast is 7 to 11 a.m. Monday to Saturday; Sundays 7 to noon.
